Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, eggs, milk, lemon juice, and lemon zest.
- Combine wet and dry ingredients; stir until just mixed.
- In a separate bowl, mix brown sugar, oats, and a bit of flour for the crumb topping.
- Spoon muffin batter into liners, then sprinkle crumb topping over each.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Cool the muffins before drizzling with the lemon glaze made from powdered sugar and lemon juice.
